Baking Rocky Road!

At the weekend, my Granny and I decided to bake some Rocky Road by following the lovely Tanya Burr's recipe, which you can find HERE. I love taking photos to post on my blog whenever I bake and so this time was no exception! I hope you enjoy the photos and I have also left the recipe in this post too in case you wanted it! :)

YOU WILL NEED:

  • 150G butter
  • 350g dark chocolate (or whatever type of chocolate you wish to use!)
  • 4 table spoons of golden syrup
  • 250g cookies of your choice
  • 150g marshmallows
  • icing sugar to dust on top (which I forgot to do, naturally haha!)

Weigh out your butter and chocolate (you can eat the chocolate too, as long as you have enough left over, which is always a bonus!)

Measure out your syrup too and add it to your pan with the butter and chocolate

Melt the butter, chocolate and syrup on a low heat, stirring constantly, until there are no lumps and you are left with a smooth liquid, as shown above!

Weigh out your cookies and bash them up with a rolling pin! Be sure to put them into something like a towel when  doing so. You want to be left with a variety of sizes of chunks, some big and some as crumbs.

Weigh out your marshmallows. In hindsight, it would have definitely be better to use mini marshmallows rather than normal ones!

Add both the cookies and marshmallows to your pan of melted butter, chocolate and syrup. Stir it all together to it is completely mixed up and everything is covered in chocolate!

Transfer your mixture into a tin, lined with grease-proof paper. Spread it all out evenly.

*taking selfies with your mixture is optional :)*

Place your mixture into the fridge and leave it there for at least 2 hours (we left ours for 2 & 1/2 hours) or overnight if you wish, until it goes hard and the chocolate sets.

Once time has passed, you will be able to take your rocky road out of  the fridge! You can then cut it into pieces, (which can be rather tricky as it will be super hard!) and enjoy it! YAY!!

Have any of you done any baking recently? <3

Love, Emily :) xx
